The spicy Caril de Caranguejo (crab curry) from Mozambique combines many culinary influences. If you like seafood, don't miss this recipe!

Caril (= curry) de Caranguejo (= crab) is prepared with the four most popular Mozambican spices: Cloves, curry, bay leaves and chili peppers. The aromatic crab curry was created through influences from Arabic and Portuguese cuisine as well as the native African food culture. Since fish and seafood are also an integral part of Mozambique's cuisines, it is not surprising that Caril de Caranguejo is prepared with crab.

Zutaten

 2 kg of crabs
 1 coconut
 4 tomatoes
 2 onions
 4 garlic cloves
 Ginger (as needed)
 2 tsp curry powder
 1 tsp salt
 4 chili peppers
 15 l boiling water

Zubereitung

Put the flesh of the coconut and a cup of water in a blender and blend until you have a white liquid.

Now place a clean kitchen towel over a bowl, put the coconut mixture on top and squeeze the water through the towel into the bowl as best you can. The coconut milk is ready.

Preparation Caril de Caranguejo

Wash the crabs, break them up and cut them into pieces.

Peel the tomatoes and then cut them into quarters or eighths. Put them in a pot with the finely diced onions, finely chopped garlic, cloves, bay leaves, ginger and peanut oil and stir-fry. Add some hot water and bring to boil.

Gradually add about 0.75 liters of coconut water.

Finally, add the crab pieces, season with salt and cook until the sauce thickens.

Cut the chili peppers into ring-shaped slices and garnish the sauce with them.

Cook the rice with the remaining coconut water and serve with the Caril de Caranguejo.
